Rice flour mix for making Banh Gio, a traditional Vietnamese specialty consisting of a rice flour shell filled with a filling of pork, mushrooms, and other ingredients.
Banh Gio is often eaten as a snack or breakfast and can be served with fresh herbs, pickled vegetables, and a spicy sauce such as Nuoc Cham.

Preparation:
Filling:
1. Cut 300g of lean meat into very thin slices and chop it finely, soak 10g of Peziza in water, trim off the roots and chop them into small pieces.
2. Mix the chopped meat, chopped Peziza and 1 tbsp chopped onion with 1/3 tbsp salt, 1 tsp pepper and 2 tbsp fish sauce. Divide the filling into small portions and fry in 2-3 tablespoons of cooking oil until tender.
3. Boil and peel the quail eggs.
Dough:
1. Mix 400g of rice flour with 1.6L water in a bowl and add 2 tablespoons of cooking oil. Cook while stirring until the flour mixture condenses.
Finishing/ Filling:
1. Dry the banana leaves, clean them, and tear them into pieces about 30cm wide.
2. Place 2 or 3 banana leaves on top of each other, with the back of the leaf facing inwards. Then roll them into a pyramid, leaving the tip of about 3cm closed. Place 3 tablespoons of the flour mixture into the banana leaf pyramid, then 2 tablespoons of the filling in the center, wrap, and tie tightly with string.
3. Boil water and place the pyramid dumplings in the pot to steam for about 30 minutes. Serve hot.
