Description
Rye has a strong, spicy flavor. At the Spielberger Mill, the grain is milled in several steps to produce this fine flour, which still contains many of the grain's valuable components. Use Type 1150 rye flour on its own with sourdough to bake hearty breads, or in flour blends for a savory flavor.
Basic recipe: Wheat-rye mixed bread Ingredients: 600 g Type 1050 wheat flour, 400 g Type 1150 rye flour, 20 g salt, 20 g yeast, 650 ml lukewarm water, 75 g fresh sourdough or 15 g dry Preparation: Mix both types of flour with salt. Mix the yeast in a little lukewarm water, add to the flour along with the room-temperature sourdough and the remaining water. Knead to a smooth dough, cover, and let rise in a warm place for about 30 minutes. Knead the dough again, adding a little more flour if necessary. Form two long loaves of bread and let them rise on the baking tray for another 15-20 minutes. Bake in an oven preheated to 230°C for 10 minutes, then reduce the temperature to 200°C and bake for another 40-45 minutes.
