Description
Rich, wholesome, and gluten-free. Our Kraftbrot is a whole-grain bread made entirely without flour. It consists only of flakes, various seeds, and water. Easy to bake, stays fresh for longer, and has more protein and fewer carbohydrates than other breads. This baking mix is ​​also super easy to make your own crispbread. You'll find the recipe on the packaging.
Preparation:
Pour the baking mix into a bowl. Add 600 ml of cold water and mix well with a wooden spoon until you have a smooth, yet not too soft, dough. Cover and let the mixture rest in the refrigerator for about 8-10 hours (e.g., overnight).
Grease a loaf pan (about 25 x 10 cm) well and gradually pour in the firm dough with a spoon, pressing it down firmly. Place the pan on the lowest rack of a cold oven and preheat to 200°C. Baking time: about 85 minutes. After 70 minutes, remove the bread from the tin, turn it upside down, and bake for the remaining 15 minutes.
Quick preparation:
Replace the cold water with boiling water and mix it with the baking mix to form a firm dough. Let it stand for about 30 minutes. Then proceed as described above.
Crispbread variation:
Mix the baking mix well with 600 ml of cold water and let it rise for 3 hours. Grease 2 baking trays or line them with baking paper/silicone baking mats. Spread the dough thinly and smooth it out. Preheat oven to 170 °C (fan oven), insert the two baking trays at the top and bottom, and bake for 25 minutes. Remove the baking trays and cut crispbread slices into them using a pizza cutter. The dough does not need to be cut all the way through, as the crispbread can be easily broken along the cut edges later.
Swap the trays in the oven and bake for another 25 minutes. Then turn off the oven, open the oven door a crack and let the bread dry out completely in the oven.
The completely cooled crispbread will keep in a tin for 2 - 3 weeks.
