Description
Spielberger Mühle Baking Mix for Braided Bread is a gluten-free baking mix. Simply bake your own gluten-free braided bread. To prepare it, you will need 65g butter, 235ml milk, lemon zest, 1 packet of dried yeast, 2 eggs, raisins and granulated sugar if desired, and a mixer with a dough hook. With the Spielberger Mühle baking mix, baking is quick and easy. We hope you enjoy baking your gluten-free braided bread.

Preparation time: approx. 40 minutes
Proving time: 4-5 hours
Baking time: 15-17 minutes
Heat the butter and milk in a saucepan until the butter has melted. Allow the mixture to cool to lukewarm (approx. 30°C).
Mix the baking mix, dry yeast, and lemon zest in a mixing bowl. Add raisins, if desired. Add one egg and the egg white from the second egg. Cover the egg yolk with 1/2 tablespoon of milk and set aside.
Add the warm butter-milk mixture to the flour and knead for approx. 10-15 minutes. Press the slightly sticky dough together with a scraper and, loosely covered with a tea towel, leave to rise in a warm, draft-free place for approx. 3-4 hours. The dough should roughly double in size.
Prepare a greased baking tray. After proving, knead the dough briefly, divide it into 3 equal, long pieces, and let it rest for 10 minutes. Shape each piece into a roll approximately 2.5 cm thick. Place the dough strands next to each other on the greased baking tray and carefully fold them over each other to form a plait. If the braided strands break when stacked, gather the entire dough together, knead in a little lukewarm milk, and shape again.
Brush the finished braid with the egg yolk and milk mixture and let it rise for 1 hour. Preheat the oven to 250°C (top/bottom heat). Brush the braid again with the milk and egg yolk mixture and sprinkle with sugar. Bake in the hot oven on the middle rack at 250°C (top/bottom heat) for 5 minutes, then reduce the temperature to 180°C (350°F) and bake for a further 10-12 minutes. Remove the plaited bread from the oven and let it cool.
TIP:
If using fresh yeast, please first dissolve 1/2 cube in the warm milk and butter mixture and let it rise slightly.
