The olives are harvested by hand. Freshly harvested olives are very bitter and inedible. Therefore, the olives are stored for several months in large barrels, soaked in water and sea salt, to debitter them. The debittering process takes longer for dark olives than for green ones. They are then bottled in a brine of water, wine vinegar, and sea salt. The olives are heated to preserve them.
