Description
The olives are harvested by hand. Freshly harvested olives are very bitter and inedible. Therefore, to remove their bitterness, the olives are stored for several months in large barrels, soaked in water and sea salt. They are then bottled in a brine made from water, lemon juice, and sea salt. The olives are heated to preserve them.
