Description
The carob tree belongs to the legume family and is native to the Mediterranean and Western Asia. It bears brown, hard pods as fruits, inside which lie small, brown carob seeds. These are removed from the pod, dried, and finely ground. Carob bean gum, also known as LBG or locust bean gum, has a powdery consistency.
What do I use it for? The finely ground powder dissolves easily when warm and can be stirred into sauces, soups, pasta, and dairy products to thicken them. It loosens dough, acts as a stabilizer, and is an important ingredient in the production of ice cream. Even small amounts of locust bean gum turn liquids into very stable, gel-like substances.
What else can it do? The flour also enhances the gelling effect of other vegetable thickeners and is therefore often used in combination with guar gum or xanthan gum.
