Description
A natural binding agent with many beneficial properties: This vegan thickener, extracted from the seeds of the carob tree, is odorless and tasteless. The carob tree bears brown, hard pods containing carob seeds. These are removed from the pod and ground into gluten-free flour.
What do I need carob gum for? The finely ground powder dissolves easily when warm and can be stirred into sauces, soups, pasta, and dairy products to thicken them. It loosens dough, acts as a stabilizer, and is an important ingredient in the production of ice cream. Even small amounts of carob gum transform liquids into very stable, gel-like substances that are hardly sensitive to heat, acid, and salt.
What else can locust bean gum do? The flour also enhances the gelling effect of other plant-based thickeners and is therefore often used in combination with guar gum or xanthan gum. Its swelling properties ensure, for example, that cloudy particles in lemonade don't settle to the bottom and prevent bread from going stale. It can be stirred into hot and cold dishes.
