Description
  • Naturata Maple Syrup Grade C Strong 250ml. Naturata Maple Syrup Grade C is a good alternative to sugar and a stronger, darker version of maple syrup. The maple syrup for Naturata is sourced exclusively from farmers who practice certified organic farming. Accordingly, the use of pesticides, synthetic fertilizers, and chemicals in maple sap production is avoided.

  • Uses: Maple syrup is a sweetener with a sugar content of approximately 66%. In addition to sugar, the syrup contains the natural mineral content of maple sap. The mineral content does not depend on the grading, but on the soil composition of the harvest area (the darker C grade therefore does not have a higher mineral content). Due to its high sugar content, maple syrup is not suitable for meeting mineral requirements! Maple syrup is suitable for sweetening all kinds of dishes sparingly. Drizzled on fresh waffles or pancakes, maple syrup is a delicacy.

  • Production: Of the many maple species, the sugar maple is particularly important for maple sap production. The harvest time for maple sap is limited to the period from the end of February to mid-April. When temperatures change from permafrost to night frost and the daytime temperature rises above 0 °C, the sugary sap of the maple tree begins to flow, supplying the tree with nutrients for budding. To extract the maple sap, a hole is drilled into the tree's trunk. Depending on the diameter and age, one to five tapping points are installed on each tree. Through proper tapping and without the use of chemicals, the trees are not damaged, as the bark usually heals within a few weeks, and the trees are tapped at different locations each year. The drilled hole is fitted with a drip tap so that the sap can flow from the trunk. In the past, the syrup was collected directly from the tree in small buckets. However, harvesting using pipes laid directly from the tree has become more common. The maple sap flows via hoses directly to the sugar shack for further processing. This raw sap is piped through a multi-stage evaporation system consisting of large, consecutively arranged stainless steel pans. The maple syrup is gently heated to a temperature of approximately 100°C. At this temperature, the desired consistency is achieved with a water content of approximately 33%. The syrup is then filtered, then bottled in barrels at a temperature of over 80°C and immediately sealed. The syrup continues to cool in the closed container, creating a natural vacuum that serves to preserve the syrup. During bottling, the syrup is heated again to a temperature of approximately 90°C for microbiological reasons. At the beginning of the harvest, maple sap is light and amber in color and has a mild, sweet flavor. As the harvest progresses, the sap becomes darker and increasingly stronger in flavor. These natural changes in the sap later lead to the grading of the maple syrup. A quality and taste criterion for maple syrup is its brightness or translucency, which depends on the time of harvest. In Canada, the grading is carried out by government inspectors using a spectrophotometer.
