However, Polish and Italian pierogi have one thing in common: the dough should be soft, yet elastic, and easy to roll out thinly. At the same time, it must not tear or become punctured when stuck together.
For this reason, the Italian company Caputo has developed a special flour for dumplings. Caputo Pasta Fresca & Gnocchi is a flour with a high protein content, i.e. gluten. This flour contains 13 percent of gluten. This results in an elastic dough that easily absorbs water or eggs and is easy to roll out. The consistency of the dumpling flour is W 260/260. The highest quality Italian wheat results in excellent dumpling flour.
Caputo dumpling flour is type 00 flour—meaning it is white, free of impurities such as bran and grain residues after milling. In Poland, the typical flour type is 450-550, meaning these are flours that contain more fiber, bran, and minerals.
