Description
Origin and Plantation
The farm from which the famous Jacu Bird comes is located in the Pedra Azul region, in the rural district of Domingos Martins, in the heart of Brazil. The plantation owner, Henrique Sloper, was initially not very enthusiastic when the turkey-sized Jacu Birds descended on his plantations, pecking the sweetest and ripest coffee cherries from the bush. In memory of the famous Kopi Luwak (see page 183), the idea of ​​Jacu Bird coffee was born. Since the beans only take about two hours to digest, they are not affected by animal proteins or stomach acid, but the undesirable bitter substances are removed through animal fermentation.
