This original Italian Aceto Balsamico di Modena from Giuseppe Giusti is a balsamic vinegar that has been aged for at least 10 years and has a very fine, slightly syrupy consistency, giving it a balanced acidity and an aromatic bouquet. With great dedication to the production of fine balsamic vinegars, excellent balsamic vinegars are still produced in Modena today. Il Gran Deposito is the name given to the collection of priceless barrels that date back to the 16th century and give Giuseppe Giusti's balsamic vinegars an indescribable flavor. According to this classic Giusti recipe, this Aceto Balsamico Riserva "Il Classico" is made from only the highest quality must and vintage wine vinegar, which is then aged in these precious wooden barrels for complete maturation. The composition is completed by the generous addition of very old balsamic vinegar, taken from centuries-old barrels. The balsamic vinegar has a distinctive and long-lasting aroma. With its balanced acidity, this balsamic vinegar is an ideal accompaniment to fine salads, meat, fish, raw vegetables, carpaccio, antipasti, and seafood. When gently warmed, its bouquet unfolds even better.
The ten-year-aged Aceto Balsamico 'Il Denso' from Acetaia Guiseppe Giusti has a slightly syrupy consistency and a well-integrated sweetness thanks to its ten years of ageing in old vinegar barrels. An all-rounder that, thanks to its pleasant acidity, goes well with hearty salads, and, thanks to its delicate sweetness, also goes very well with fruit and desserts.
In the Aceto Balsamico test by the magazine 'DER FEINSCHMECKER', this vinegar achieved first place.​
The production
The production of high-quality Aceto Balsamicos of varying ripeness always begins the same way.
Must of the Trebbiano and Lambrusco varieties, which are harvested in the Modena area, is used. Due to the high Oechsle degree of the Trebbiano and Lambrusco varieties, these are ideal for vinegar production. Around 70 liters of must are pressed from 100 kg of grapes. This is then boiled for around 12 to 24 hours at a maximum of 90°C; after this process, a residue of around 30 liters of slightly thick, aromatic must remains. The boiled must is stored in large demijohns over the winter. In spring, when the weather gets warmer, fermentation begins and alcohol is formed. The use of acetic acid bacteria and inoculation with a so-called 'mother of vinegar' begins the vinegar production process, which breaks down all the alcohol. The young vinegar is then placed in the first barrel (starting with Slovenian beech in the first year, then continuing its maturation in Slavonian oak, Limousin oak, ash, juniper, mulberry, cherry, and chestnut). Over the years, the vinegar travels through the chain of different barrels, with the annual liquid loss of approximately 10% being replenished each time with vinegar of a higher category. Over the course of six to 20 years, this produces a balsamic vinegar of varying density, always harmonious for its respective storage.
Giusti "Il Denso" Balsamic Vinegar of Modena, I.G.P. / 250 ml
Giusti is the oldest and most recognized producer of balsamic vinegar from Modena and was the sole supplier to the King of Italy. Founded in 1605, it is currently run by the 17th generation of the family. Furthermore, in 1863, Giuseppe Giusti published one of the first documented recipes for the production of balsamic vinegar, which is preserved in the family archives.
A blend of 65% reduced must of fine Trebbiano grapes from a late harvest and 35% wine vinegar (already aged for many years in wooden barrels). Aged for at least 10 years in 200L barriques with the addition of very old balsamic vinegar (over 25 years old).
Exceptionally creamy and with a pleasantly sweet aftertaste, this round, full-bodied balsamic is suitable for adding directly to any food. It goes perfectly with seafood, fish, mozzarella, roasted vegetables, salads, cheeses, and fruit. But it's also a delight on its own, as an aperitif.
