Description
  • Peeled Yellow Tomatoes
  • Il pomodoro più buono, Campania
  • Characteristics
  • Pomodoro literally means golden apple, the perfect name for our mildly aromatic, yellow tomatoes. They grow and ripen under ideal conditions on fertile volcanic soil at the foot of Mount Vesuvius. Sun-ripened and harvested seasonally, the fruits develop a pleasantly sweet flavor and, just like red tomatoes, are versatile in the kitchen. Particularly rich in beta-carotene. Ideal for delicate pasta sauces or light fish and meat dishes. Whole, peeled, and in their own juice. Limited edition.

  • Il pomodoro più buono
  • Campania, Italy
  • The elongated, firm tomato with few seeds and thick skin has always been one of the native fruits of Campania. The skin peels easily, and the ratio of flesh to juice and sugar to acidity is harmonious and intense. They taste almost bittersweet and, as we and many other connoisseurs believe, make the best of all tomato sauces. Following Cirio's example, a canning industry also developed in Campania, successfully exporting San Marzano cans worldwide. While the taste and firmness were undisputed, the harvest had to be, and still has to be, done by hand, many times between July and September. For this reason, among others, the industry turned to robust hybrid varieties in the 1970s, which could be cultivated and harvested mechanically. Furthermore, the variety fell victim to a virus during those years. The San Marzano, once the pride of Campanian farmers, was forgotten. It wasn't until about 20 years later that Slow Food remembered that this tomato had once existed. Old seeds from two more resistant varieties had been preserved at Cirio's research center and were sown again. As early as 1996, the San Marzano tomato received the Eu's Dop (Protected Designation of Origin) quality award for the Agro Sarnese Nocerino region in the province of Naples. There, the tomatoes grow on volcanic soil near the sea. The Dop is also tied to a consortium. Not all farmers cooperate with this association, which is why there are both Dop tomatoes and canned tomatoes without the Dop label. This does not affect the quality in this case, which we check annually on-site at our supplier's farm, from field to can. Ingredients These mild and aromatic yellow canned tomatoes are an indispensable base for many dishes from southern Italy. Sun-ripened and harvested seasonally in southern Italy, they have a pleasantly sweet taste. They are incredibly versatile in Mediterranean cuisine, as well as in any other. Due to their high beta-carotene content, they are a wonderful accompaniment to light fish and meat dishes. And they are also the perfect base for pasta sauces.
