Description
The FunCakes meringue powder is suitable for meringues, meringues, pavlova and American buttercream. The powder is ready to use. You only need to add water and sugar if necessary.
Tip: Always use a clean spoon.
Due to the structure of the product, it is not suitable for making royal icing.
Preparation of meringues:
Preheat the oven to 120°C (fan oven: 100°C). Degrease the mixing bowl and whisk with hot water. Mix 14g meringue powder with 125ml water and 125g caster sugar. Beat the mixture on high speed until stiff peaks form. Add 250g caster sugar in a stream. Mix until the foam forms fine strands. Pipe the meringues onto a baking tray lined with baking paper and let them dry in the oven for approx. 90 minutes. Allow the meringues to cool in the oven.
Preparation of Pavlova:
Preheat the oven to 120°C (fan oven: 100°C). Mix 14g of powder with 125ml water and 125g caster sugar in a bowl and stir with a whisk. Ensure that the bowl and whisk are free of grease. Beat the powder on high speed until white foam forms and gradually add 500g caster sugar. Mix until the foam forms fine strands. It should be a tough, stiff mixture. Place baking paper on a baking tray and pour the foam onto it. Flatten it slightly with the bottom of a spoon. The mixture should have a diameter of around 20cm. Allow the meringue to dry in the oven for around two and a half hours and then cool in it. Mix 250ml whipping cream with 2 tablespoons of confectioners' powder and a sachet of cream stiffener. Spread this mixture on the cooled Pavlova. To give the berries an "icy" appearance, moisten them slightly and then roll them in granulated sugar. Decorate the Pavlova with fresh fruit.
Preparation of American Buttercream:
Mix 190g Crisco with 7 teaspoons (35) of water, then add 450g confectioner's powder and 15g meringue powder. Finally, add 4 teaspoons (20g) of water and mix everything into a spreadable cream.
