Description

6 unleavened sheets, essential for making calissons and macarons. Once you have baked the macarons, slide the unleavened sheet underneath and cut around each macaron. Calisson, a specialty of Aix-en-Provence in southern France, is a confection made from a fine paste of melon confit and ground almonds, topped with royal ice cream and placed on a base of unleavened bread. For calissons,

the unleavened sheet should be placed on the baking sheet before pouring the ice cream. It is also with these sheets, sometimes called host paper, that you can cut out and create matzo decorations to place on pastries.

These sheets are made like host paper, but they are not leavened (not puffed up by the action of yeast). Cut your unleavened sheets to the desired size using scissors.

Potato starch, water. May contain traces of cereals, corn,

soy, and derivatives. Keep away from light and moisture after opening.
