  • Erythrol and erythritol are the substitute names for the same product. It is a sweetener that belongs to the group of polyhydric or sugar alcohols. Erythritol is naturally found in fruits such as melons, pears and grapes, as well as in corn, seaweed, lichen and red wine. In industry it is obtained by fermentation, it is the same process as in cheesemaking, but instead of milk fruit is used. Another way to obtain it is through the use of glucose and various types of yeast or glycerin, also using microorganisms, in this case Yarrowia lipolitica.
  • It can be used as a substitute for traditional sugar, very similar in appearance. It's ideal for sweetening coffee, tea, desserts, and as an ingredient in cakes. However, erythritol is less sweet and contains about 60-70% sucrose (sugar), which should be included in recipes when replacing these products. When consumed, it leaves a soft feeling in the mouth. Its main advantage over sugar is its low calorie content and the fact that it has a zero glycemic index, meaning it doesn't raise blood sugar levels. 1 g of erythritol contains only about 0.2 kcal, which is why it's called a "zero-calorie sweetener." Among existing sweeteners, it's the lowest-calorie option, providing virtually no nutritional value. Therefore, it's ideal for people who are controlling their calorie intake and restricting their intake. Erythritol isn't metabolized by our bodies because we don't have an enzyme that would break it down. It's almost completely eliminated and doesn't affect the intestinal bacterial flora at all. Due to their immature digestive system, it should not be used by children under 3 years of age. After that, there are no contraindications or side effects.
  • Erythritol has a positive effect on our body by acting as an antioxidant and protecting teeth. As an antioxidant, it binds with free radicals and protects our body from their harmful effects.
