Type 00 represents the purest flour possible, completely free of impurities and bran; the flour is snow-white. Caputo Pizzeria pizza flour is a flour with 12.5 percent protein or gluten content. Its W strength is 260-270.
We recommend using Caputo Pizzeria flour together with Caputo yeast and brushing the dough with a sauce based on San Marzano Mutti tomatoes, which we also have in our range. A flour for those who love a thin Italian pizza. The pizza flour is poured into a paper bag to allow the product to breathe. On the market, you can find flour in so-called repacks—bought in large bags and then packaged in Poland. We don't do that. You buy the original Caputo Pizzeria Tipo 00—packaged in Italy and brought to us on a pallet.
The dough made from this flour behaves completely differently than dough made from the 450-550 type flours popular in Poland: First, it doesn't absorb moisture from sauces and additives, and it doesn't rise excessively.
Pizza flour must be stored in a dry place. A common mistake is to store flour in a bag in the kitchen. The bag is made of paper, and flour is a hygroscopic product that absorbs moisture. In the kitchen, where moisture occurs naturally, even if only from cooking pots, this flour loses its properties. If it absorbs moisture, it will behave completely differently. If you have a pantry, consider storing your pizza flour there. If not, find another place in the house where the flour is dry and warm.
