Byodo Balsamcio is made by blending high-quality ingredients such as white wine vinegar and grape concentrate. This creates the typical balsamic flavor. However, not all balsamic vinegars are created equal – the specific recipe is important, especially the ratio of the ingredients. Byodo Condimento Balsamico Bianco is a light balsamic vinegar. With a delicately sweet aroma, it goes well with all dishes where a balsamic flavor is desired, but the dark color is distracting. In Italy, vinegars with an acidity below 6% are referred to as condiments. Byodo Condimento Balsamico has an acidity level of 5.5%. Condimento Balsamico bianco is blended only from white wine vinegar and grape concentrate. This light balsamic vinegar is also stored at Byodo for up to six months, as this is the only way its balanced and harmonious flavor can develop.
