Bauckhof analyses each batch of gluten-free products for gluten-freeness in its own laboratory immediately after production. All gluten-free products are registered with the German Celiac Society.
Preparation
Vegan Marble Muffins
(for 12-14 muffins)
Ingredients: Marble cake baking mix, 100 g margarine, 150 g soy yogurt, 4 tbsp neutral oil, 1 tsp baking powder, 6 tbsp hot water
Preparation: Mix the base mix with all ingredients (except the water) until a homogeneous dough is formed. Divide the dough in half, mix the cocoa with 6 tbsp hot water, and fold the mixed cocoa into one half. Layer the light and dark batter alternately in muffin tins. Then spiral the dough layers through to create a marbled pattern. Bake at 180°C in a preheated oven for 25-30 minutes and allow to cool on a rack.
Note: This vegan preparation does not work in a deep loaf or bundt pan.
Donauwellen-Schnitten
Ingredients: Marble cake mix, 4 eggs, 180g softened butter, 1 large jar of cherries (drained weight g), 2 packets of vanilla pudding powder, 4 tablespoons of sugar, 750ml milk, 250g butter, 400g dark chocolate coating, 4 tablespoons of neutral vegetable oil
Dough preparation: Mix the basic mixture with 4 eggs, 180g butter and 4 tablespoons of hot water to form a smooth dough. Spread half of the dough onto a baking tray lined with baking paper using a spatula. In a separate bowl, mix the contents of the smaller packet (cocoa powder) with 3 tablespoons of cold water until smooth and then mix with the remaining dough. Carefully spread the dark batter over the light batter. Drain the cherries, spread them over the batter, and press them down lightly. Bake on the middle rack at 180°C for 30 minutes, then allow to cool completely.
Preparation of the cream: Make a pudding from 2 sachets of vanilla pudding powder, 750ml milk, and 4 tablespoons of sugar, then pour into a bowl and allow to cool. Beat 250g butter with a hand mixer until fluffy. Stir the pudding into the fluffy butter, tablespoon by tablespoon. Tip: For this step, the butter and pudding need to be roughly the same temperature. Spread the pudding buttercream over the cake and then chill for a few minutes.
Chocolate glaze: Melt 400g of dark chocolate with 4 tbsp of neutral oil in a water bath, then carefully spread it over the pudding buttercream and chill the finished cake.
