Incidentally: Until the 18th century, buckwheat, which is particularly easy to grow, was one of the most important sources of food in the northern German heath region and is therefore still popular today for traditional regional dishes such as the northern German buckwheat cake. But not just a classic for cakes: With its rather strong nutty flavor, our wholegrain buckwheat flour is extremely versatile and, in addition to cakes, is also ideal for breads and rolls, waffles, pancakes, and pasta doughs. Our Bauck buckwheat flour at a glance: - Naturally gluten-free and of the highest quality - Finely ground in our gluten-free Bauck mill - Delightfully nutty flavor - Ideal for cakes, bread, waffles, pancakes, and pasta dough - Savory buckwheat galette Ingredients: 100 g buckwheat flour, 80 g rice flour, 300 ml water (use rice milk or cow's milk for a fuller flavor), 3 eggs, 1 tsp salt, 1 pinch of nutmeg, 1 pinch of white pepper, butter or neutral oil for baking the galette. Whisk together the flour, eggs, salt, spices, and about half of the liquid until smooth. Stir in the rest of the liquid. In a non-stick pan over medium heat, fry the dough in batches on both sides until crispy. Tip: It's especially delicious served with grated Gouda, chives, and plenty of freshly ground pepper. A green salad goes well with it. Serves 2.
