After at least 12 years of racking and aging, the amount of Traditional Balsamic Vinegar of Reggio Emilia that is expected to be consumed during the year is drawn from the first barrel. A portion of this is submitted to the judgment of tasters for classification into three different bollini (seals). The division of Traditional Balsamic Vinegar of Reggio Emilia into bollino Aragosta (lobster seal), bollino Argento (silver seal), and bollino Oro (gold seal) is carried out according to the strictest criteria established by the production regulations. Tasters conduct the tastings and award each vinegar a score based on its visual, olfactory, and flavor characteristics.
