Description
  • General Information
  • Naturata Grade A maple syrup is a good alternative to sugar and the milder, lighter variety of maple syrup.
  • Naturata maple syrup comes from the Canadian province of Quebec, the world's main maple syrup-growing region. Naturata's maple syrup is sourced exclusively from farmers who operate according to certified organic farming guidelines. Accordingly, the use of pesticides, synthetic fertilizers, and chemicals in maple sap extraction is prohibited.
  • Special Features
  • All CO2 emissions generated during the production and transport of this product are offset in partnership with myclimate.
  • Uses
  • Maple syrup is a sweetener with a sugar content of approximately 66%. In addition to sugar, the syrup contains the natural minerals of the maple sap. The mineral content is not dependent on the grade, but rather on the soil composition of the harvesting area (the darker Grade C does not necessarily have a higher mineral content). Due to its high sugar content, maple syrup is not suitable for meeting mineral requirements! Maple syrup is suitable for sparingly sweetening all kinds of dishes. Drizzled on fresh waffles or pancakes, maple syrup is a delicacy. Production: Among the many maple species, the sugar maple is particularly important for maple sap production. The harvest season for maple sap is limited to the period from the end of February to mid-April. When temperatures change from continuous frost to night frosts and the daytime temperature rises above 0 °C, the sugary sap of the maple tree begins to flow, supplying the tree with nutrients for bud formation. To obtain the maple sap, the tree is tapped at the trunk. Depending on the diameter and age of the trunk, one to five taps are made on a single tree. With proper tapping and without the use of chemicals, the trees are not damaged, as the bark usually heals within a few weeks and the trees are tapped in different locations each year. The borehole is fitted with a drip tap, allowing the sap to flow from the trunk. Previously, the syrup was collected directly from the tree using small buckets. However, harvesting via pipes laid directly from the tree has now become standard practice. The maple sap flows through hoses directly to the processing plant. This raw sap is then passed through a multi-stage evaporation system consisting of large, interconnected stainless steel pans. Here, the maple syrup is gently heated to a temperature of approximately 100°C. At this temperature, the desired consistency with a water content of about 33% is achieved. The syrup is then filtered, subsequently filled into barrels at a temperature above 80°C, and immediately sealed. In the sealed container, the syrup continues to cool, creating a natural vacuum that serves as a preservative. For microbiological reasons, the syrup is then reheated to a temperature of approximately 90°C before bottling. At the beginning of the harvest season, maple sap is light amber in color and has a mild, sweet taste. As the harvest progresses, the sap darkens and becomes increasingly flavorful. These natural changes in the sap determine the later grades of maple syrup. A key indicator of quality and flavor is the brightness or translucency of the maple syrup, which depends on the harvest time. In Canada, the grading is carried out by government inspectors using a spectrophotometer.
